But too often these days, while our biggest stars may be omnipresent in our lives, we feel no genuine connection to them or their artistry.

Maine chefs, restaurants are James Beard semifinalists

By Meredith Goad, Press Herald Staff Writer

Maine chefs make up a full third of the semifinalists for the prestigious James Beard Award for Best Chef in the Northeast, odds that bode well for at least one of them making the list of finalists in March.

Three Portland chefs or chef teams are on the semifinalist list, including Krista Kern Desjarlais of Bresca, who was nominated for the first time last year; Demos Regas of Emilitsa; and first-time nominees Danai Sriprasert and Nattasak Wongsaichua of Boda.

Nominated from elsewhere in the state were Brian Hill of Francine Bistro in Camden and Pennelle, Megan, and Phoebe Chase and Ted LaFage of Chase's Daily in Belfast.

Petite Jacqueline, Portland's new French bistro, was nominated in the Best New Restaurant category, and Fore Street received another nod in the Outstanding Restaurant category.

Melissa Kelly, chef and co-owner of Primo in Rockland, was nominated in the Outstanding Chef category.

The James Beard Foundation Awards are known as the Oscars of the food and beverage industries. The foundation announced that it received a record 57,000 online entries this year competing for a spot in 20 restaurant and chef award categories.

Those online entries are tabulated by an independent accounting firm, which then turns over the results to a nominating committee that produces a ballot based on the results and eligibility requirements.

The semifinalist list will now be sent to an independent volunteer panel of more than 550 judges that includes past winners, restaurant critics, food editors and other knowledgeable people in the food world. The panel narrows the list down to five finalists in each category.

Finalists will be announced March 19 at The Palazzo in Las Vegas. Winners will be announced at a ceremony May 7 at Lincoln Center in New York City.

Maine Restaurant Week and Sea Dog Brewing Company host a true Breakfast of Champions March 9

SOUTH PORTLAND, Maine - Sea Dog Brewing Company will host The Incredible Breakfast Cook-Off, Maine Restaurant Week's breakfast competition benefiting the Preble Street Resource Center, on Friday, March 9 from 7-9 a.m. at their South Portland location, 125 Western Ave. This is the third year for this sell-out event.

Maine champions of breakfast present guests with small plates of their best breakfast dishes with the hopes of earning this year's bragging rights. Guests are rewarded with a full heart and a happy stomach; the event raised an impressive $3,750 for Preble Street in 2011.

10 Things You Should Know About Wine for Valentine's Day

The Maine Beer & Wine Distributors Association offers ten helpful tips for Valentine's Day

AUGUSTA, Maine - Valentine's Day is approaching and many couples will celebrate the occasion with an elegant dinner out or stay home and share a candlelight dinner over a romantic glass of wine. Then there are people that will scramble to grab a romantic card or pick up a bottle of wine on the way home from work. However, when it comes to Valentine's Day, there are some important things to consider about wine before popping the cork, or perhaps even popping the question.

This month, the members of The Maine Beer & Wine Distributors Association have compiled a list of the "10 Things You Should Know about Wine for Valentine's Day." The list includes tips ranging from the best type of wine to pair with chocolate to the best way to remove a wine stain.

1. Popping the cork
Just like in a relationship, getting off to a good start always helps. To open a bottle of wine, using a waiter's corkscrew, cut the foil all the way around the rim of the bottle. Remove the foil. Unfold your corkscrew and penetrate the cork slightly off center so the "worm" of the corkscrew will feed into the center of the cork. If you are using a double-clutch type of corkscrew, use the first stop to loosen the cork about halfway then use the longer stop to pry it the rest of the way out.

2. How to master the pour
If you're looking to impress your partner, you will want to start with the pouring process. When you pour the wine, try not to clang the top of the glass with the neck of the bottle. When you are finishing your pour, give the bottle a slight twist upward to keep it from dripping.

3. Spillage is never good
If you're a little nervous on the big night and you happen to spill some wine, it is important to know how to save yourself, your clothes and maybe the relationship. Typically, you can blot the spill with a paper towel then immerse it in soda water, blot it again and then apply a baking soda paste. There are commercial products like Wineaway that will do the job, too!

4. Use the right wine glass
Scientific studies have been done and there is a method to the madness. Red wine glasses are generally larger and have a bigger bowl. White wine glasses are narrower and taller. There are some companies that make glassware that is specific to the type of grape that a wine is made from, such as Cabernet Sauvignon or Bordeaux glasses.

5. Best wines with chocolate
Syrah-based wines have a richness of plumy, blackberry fruit and a dense, textured mouth-feel that can't be beat with chocolate. Syrah thrives in myriad wine-growing regions including the Rhone Valley in France, McLaren Vale in Australia, Columbia Valley in Washington, and Santa Barbara in California. It is available at price points from $6 to $26, and frequently tastes far above cost so they really tend to over-deliver. If you want the best of both worlds you can find a new wine called ChocoVine that blends rich Dutch chocolate and fine red wine.

6. Storing wine for the special night
The basic rule of thumb for wine storage is "cellar temperature" which is generally about 50 degrees. Equally important is the serving temperature. On the whole, American's consume white wines too cold - resulting in closed, tight, uninteresting, flat-flavored wines - and red wines too warm - yielding "hot," alcoholic, burned, over-cooked flavors.
Based on a starting point of 50 degrees:

Whites - refrigerate for 3 to 4 hours prior to service. Initial pours will be chilled; optimal flavors of the wine will be displayed as the wine begins to warm by way of ambient room temperature. Place wine in a ceramic bottle holder for dinner. The wine will hold a good temperature of roughly 45 degrees in the chiller and "open" in the glass it will warm to 50 - 55 degrees as you enjoy the wine.

Reds - remove from "cellar" storage (50 degrees) about 20 minutes prior to service allowing the wine to warm. Optimal enjoyment level for reds is between 62 and 66 degrees.

7. Wine can be considered an aphrodisiac
As with any alcohol, wine has been known to increase a person's sexual desire and has been used for centuries as a natural aphrodisiac. In particular, red wine is rich in resveratrol, a form of antioxidant which increases estrogen production. In general, wine helps people relax while also stimulating their senses. More specifically, there is an incredibly unique wine produced by Andrew Quady in Madera, California called Quady "Deviation." It is infused with Rose Geranium and Damiana, an herb from Central America with libido-enhancing properties.

8. Great relationships mean go ahead and buy in bulk
If you've found the person of your dreams and the wine he/she loves, don't be afraid to buy in bulk.

9. You can buy local
There are about 20 commercial wineries in Maine and the number is growing. Most Maine wineries are producing good native fruit wines, others are experimenting with locally grown grapes, and some are buying juice from other parts of the country and blending and/or bottling in Maine. For a listing visit http://www.mainewinetrail.com/wineries.html

10. The best wine for pairing with lobster is chardonnay
As with any wine pairing with food, this is a personal preference. Chardonnay is the wine of choice for lobster; since lobster is fairly rich, it helps to pair it with a wine with enough body to match that richness. During the winter, lobster meat is usually sauteed in butter, graced with a splash of sweet muscat and heavy cream and served over linguine. As a result, this dish is best suited to a full-bodied, tropical fruit-flavored chardonnay from California's Russian River Valley or Monterey County, or one from southern Burgundy.

These tips will help you plan for the big night, but remember that it is also important to be responsible. The Maine Beer & Wine Distributors Association wish you and yours a happy Valentine's Day.

Goodwill to open buy the pound warehouse outlet in Gorham Feb. 16

New store model furthers the nonprofit's sustainability efforts

Gorham - Goodwill Industries of Northern New England announces the Grand Opening of the Gorham Buy-the-Pound Warehouse Outlet at 9 am on Thursday, February 16. The warehouse outlet is located in the Gorham Industrial Park (34 Hutcherson Drive) and offers deeply discounted merchandise on a "buy-the-pound" basis.

The warehouse outlet is adjacent to Goodwill's new warehouse and recycling center. Goodwill purchased the building in an effort to consolidate multiple warehouse locations and further expand recycling efforts. The building is 106,000 square feet, with 6,500 dedicated to the warehouse outlet. The outlet features merchandise that did not sell in Goodwill's traditional retail stores and will be rotated throughout the day, continually offering new options to customers. The outlet offers a staggered pricing structure, depending on the pounds of merchandise purchased (see complete pricing structure below).

The opening of the Buy the Pound Warehouse Outlet furthers Goodwill's sustainability goals of maximizing the value of donations and diverting items from the landfill. Sales through the outlet store will divert about 200,000 pounds of trash in the first year of operation. "Shopping at the warehouse outlet will be a different experience than shopping at our traditional retail stores," noted Bob Frederick, Director of Operations. "It is a simple set up, with merchandise on tables or shelving, encouraging customers to browse our selection. We are able to offer goods at a significant savings before goods are introduced to our recycling efforts."

The warehouse outlet also accepts donations, including computers and parts for the ReConnect computer recycling program. Since the start of the ReConnect program 2009, nearly five million pounds of e-waste have been recycled in Maine, New Hampshire and Vermont. The new warehouse space also allows Goodwill to more efficiently recycle other materials, including paper, cardboard, metals, glass, plastics and textiles.

"We are thrilled to offer the public this new warehouse outlet model," noted Anna Eleanor Roosevelt, Goodwill President and CEO. "At our core, Goodwill's model reflects the full scope of sustainability. The opening of the outlet has allowed us to maximize the value of donations, create new jobs and expand waste reduction and recycling efforts."

The opening of the warehouse outlet has created over ten new jobs. Warehouse Outlet hours will be Monday-Saturday, 9 am to 6 pm and Sundays 9 am to 5 pm. Please note that because of the deeply discounted pricing, the warehouse outlet is unable to honor other Goodwill discounts or coupons. All items are sold as is and cannot offer returns, refunds or exchanges. The outlet accepts cash, Mastercard, Visa and Discover cards (no checks).

Downtown Showdown canceled due to lack of...what's that stuff? Oh, snow

By Ray Routhier, Press Herald Staff Writer

PORTLAND - The Downtown Showdown, an annual Portland skiing and snowboarding event put on by the Sunday River and Sugarloaf ski areas, has been canceled this year due to a lack of snow.

The event had been scheduled to be held in Portland's Monument Square Friday. But officials from the ski areas met this morning and decided to cancel the event, said Ethan Austin, communications manager for Sugarloaf, in Carrabassett Valley.

Austin said the event will not be rescheduled for this winter.

The free event has been held for the past few winters in Monument Square. A 35-foot-high skiing hill has been constructed each year with scaffolding and snow trucked in from nearby areas. Skiiers and snowboarders then competed in a range of events while crowds in Monument Square looked on.

The event was created as way for the ski resorts # which are part of the same company # to get exposure in the state's largest city, said Austin.
